Since I have taken over the "cooking" duties (see post here) and am now planning out meals two weeks in advance, I'm always on the hunt for a yummy, quick, fairly-healthy dinner recipe!!
Well, Southern Living definitely didn't let me down with this one... It's my new Go-To Recipe!
It's quick and Delicious!! So I thought I would share with you guys - in case you didn't happen to steal accidentally take a copy of June's Southern Living from the Dr's office! ;)

Grilled Chicken and Veggie Tortellini
4 small Zucchini, cut in half lengthwise if grilling, chop small if sauteing
2 skinned & boned chicken breasts (13 oz)
1 Tbsp. Freshly ground Italian Herb seasoning
1 (19 oz) package frozen Cheese-Tortellini
1 (7 oz) container of reduced-fat Pesto
2 large tomatoes, seeded & chopped
Garnish: grated Parmesan cheese
1. Preheat the grill to 350 (medium heat). Sprinkle zucchini & chicken with seasoning.
2. Grill zucchini and chicken at the same time, covered with grill lid. Grill zucchini 6 to 8 minutes on each side
(or until tender) and then switch. Grill chicken 5 to 6 minutes on each side or until done.
3. Meanwhile, prepare tortellini according to package.
4. Coarsely chop chicken & zucchini. Toss tortellini with pesto, tomatoes, chicken & zucchini.
Serve immediately. Garnish, if desired.
I've made this twice now. The first time I used the grill and followed the directions exactly as stated. The second time our propane tank was empty (crap!) so I pulled out the 'ol trusty college George Forman for the chicken and sauteed the vegetables. I also added squash (because we had a lot in the fridge) and served with a side of asparagus! I also didn't have fresh seasoning - just used good old McCormicks Italian Seasoning with S/P. :)
So go on - give it a try! Your family will be glad you did!!
So now I'm curious - what's your go-to recipe??? That 'ol faithful recipe that never lets you down? I'd love to give yours a try ... I have a very hungry husband (and lots of his single Navy pilot friends in need of a good hot meal!) to feed !! Ladies, if you're single ... my house is the place to be! :)
