Cheesecake Bites {Memorial Day Style}

Need a last minute dessert this weekend for your cookout?
 Something easy, delicious and patriotic?!
Well, you're in luck because today I'm sharing with you the BEST recipe ever! :)
Yes, the BEST.EVER. It's true.
Just try it, you'll be SO glad you did!
and so will everyone at your table! :)

I introduce to you --
the best cheesecake bites ever ... 
dressed up in their Sunday{red, white and blue} Best for Memorial Day :)
complete with fresh blueberries & a homemade strawberry sauce!
ALL is right in the world when you eat one of these bad boys! :) 
Trust me.
and there is NO WAY you an eat just one.
It's simply not possible. 

Want to make some for your next party?
1 cup graham crackers crumbs
1/2 stick butter
1 tsp cinnamon
1 tbs sugar
2 - 8 oz cream cheese packages
3/4 cup sugar
1 tbs vanilla
1 egg + 1 egg white
1/2 cup sour cream

1. Preheat your oven to 325 degrees.
2. Combine the graham cracker crumbs, melted butter, cinnamon and sugar in a bowl.
3. Spray mini muffin pan very liberally with Pam (or something similar).
4. Put the cracker crumb in the muffin tin and place in freezer. 
tip: press the crust firm into the pan
5. Prepare cheesecake filling! 
Add softened cream cheese, vanilla, sugar and eggs, beat until smooth. 
Then stir in sour cream.
5. Fill the muffin tins with the cream cheese filling.
They don't rise much, so you can fill them pretty full.
 6. Bake in over for 12-15 minutes.
Then let cool for a few hours!
 I added some homemade strawberry sauce and fresh blueberries!

So festive. So delicious.
